Easy High Protein Cottage Cheese Breakfast Rolls

Looking for a simple high-protein breakfast or snack that actually tastes good? These cottage cheese breakfast rolls are soft, filling, and made with just a few basic ingredients.


They’re easy to meal prep, naturally gluten-free when made with certified gluten-free oats, and simple to customize with your favorite flavors and toppings.

Enjoy them fresh out of the oven, as part of a quick breakfast sandwich, or packed for busy mornings throughout the week.


Ingredients


For the rolls
  • 250g cottage cheese

  • 5 dl oats

  • 4 eggs

  • 1 tsp baking powder

  • ½ tsp salt


Optional toppings

  • Poppy seeds

  • Sunflower seeds

  • Pumpkin seeds


How to Make Them

  1. Preheat your oven to 200°C (390°F).

    1. Add all ingredients to a large bowl and mix together with a fork until combined. Once the mixture comes together, use your hands to shape six evenly sized rolls.

    2. Place the rolls on a parchment-lined baking tray and top with your favorite seeds for extra texture and flavor.

  2. Bake for about 20 minutes, or until lightly golden and easy to lift from the parchment paper.

  3. Let cool slightly before serving.
